How to Cook Jollof Rice With Step by Step Easy Recipe.

Jollof rice is a popular rice recipe from Nigeria. This is the Nigerian version, there is a ghana version and others. Many different recipes exist among different Nigerian ethnic groups. The difference is just the choice of ingredients. While I used tomato as the coloring agent in this recipe, others chose palm oil or palm oil sauce.
Fry the ground tomato/pepper/shombo. Start by adding oil to the pot, add onions then the tomato/shombo/pepper blend. Fry for 15-20 minutes until it dries.
Add 3 cups of water once the tomato is well fried, add the chicken sauce (meat water), salt to taste, teaspoon each of ground ginger, garlic, thyme, curry powder. Add a seasoning cube too and bring to boil.
Taste for salt
Add the rice and cover to cook for 30-45 minutes. You can add more water as it cooks, you want itsoft andeasy to chew.

Serve jollof rice and grilled chicken.
Notes
You can always substitute fresh tomatoes with canned tomatoes.
