Unripe plantain porridge is a popular Nigerian food, it is food for millions of Nigerian families who has many different ways of preparing it. Plantain is a widely known food for people of all races and creed, it is a wild plant that grows in several parts of the world, especially Africa and Europe. 

One of the ways we eat plantain in Nigeria is to turn it into porridge.

Porridge plantain can be made in many different ways but this recipe here is iron clad! TRUST ME.

Which is more? Anybody, any where can enjoy this dish of plantain without having any worries about blood sugar spike or overnight weight gain. 

You can cook it with vegetables or without vegetables.

How To Make Plantain Porridge

Step 1

Peel off the back of the plantain and cut to any size you like. I like mine in cubes, as you can see above. Then set aside. You need ground tomato (500ml) you can add the peppers together to grind.

Step 2

We start by frying the tomatoes, set a clean pot on heat, add palm oil, 150ml, add half cup of sliced onions, add the ground tomatoes/peppers and fry for 15-20 minutes.

Step 3

Once the tomato/pepper is well fried, Add your crayfish, 1 cups of water, pre-cooked meat to the already fried tomato, stir and allow boiling. Add salt to taste.

Step 4

Add the liver, I used fresh cow liver and already precooked assorted meat for this plantain porridge as you can see from the image above. Add your cubed plantain, Add the remaining chopped onions and stir.

Add 2 cups of water, allow the plantain to cook for 15 minutes,

Step 5

Once the plantain is cooked and soft, stir to confirm that it is not burning, lower the heat, add some vegetables, I used a handful of pumpkin leaves. Stir after one minutes and serve your delicious Plantain porridge

Notice the abundance of gravy, your plantain porridge should never end up dried and hard to chew. The gravy is savory and makes the whole experience a mesmerizing one.

Who can eat plantain porridge

Anyone can enjoy a meal of unripe plantain, even though it is reserved for diabetic patients. However, considering the health benefits and deliciousness, I don’t think anyone should stay a week without trying this delicious meal. And yes, plantain porridge has lesser cabs then yam porridge, hence a good food for diabetic petience.

Can I Try This With Ripe Plantain

You can try a combination of ripe and unripe plantain for porridge, been there, done that, but it is not always the best even though the added sweetness makes a lot of difference.

Ingredients
  

  • unripe plantain 5 medium sizes
  • Handful ugu leaves
  • 500 ml ground tomatoes
  • 5 scotch bonnets pepper
  • 4 pieces of liver
  • 400 g assorted meat
  • 1/2 cup ground crayfish
  • Salt to taste
  • 1 seasoning cubes
  • 150 cl of palm oil
  • 1 cups of chopped onions

Instructions
 

  • Remove the back of the plantain, cut to any size you like, set aside and prepare the rest of the ingredient. Blend tomatoes, peppers and chop the onions too.
  • Set a clean pot on heat, add 150-200ml palm oil, add some onions, add the tomatoes and fry for 20 minutes
  • Once the tomato is fried, Add the meat and stock, add the crayfish, 1 cup of water and then the liver. Stir and cover your pot to boil.
  • Add the plantain, the remaining onions, cover and cook for the next 15-20 minutes.
  • Once the plantain is properly cooked, Add some vegetables, I used fluted pumpkins.
