Fried Rice

Fried rice combine vegetables, meats and a handful of other ingredients to make a sumptuous meal. It is very unlikely that this meal will be absent in any high-profile event in Nigeria. Wedding, birthday parties, we all serve this meal.

It is the second most popular rice recipe in Nigeria, second only to jollof rice. 

If this is your first time, don’t worry, it is easy and you are going to be smiling in no time.

I have written a detailed recipe to show you how to make fried rice the Nigerian way.

What are the ingredients for fried rice?

I combine several ingredients like chopped liver, carrots, green beans, peas, sweet corn chicken stock, chopped green pepper, cabbage and a handful of other ingredients while making Nigerian version of fried rice. 

Below are some ingredients.

Chopped liver, chicken stock, chopped cabbage, green peas chopped carrots, sweet corn and green beans are some ingredients for fried rice as you can see displayed above.

Complete List of Ingredients

4 cups of rice.
4 cups of sliced Cabbage.
2 cups of sliced Carrot.
2 cups of sliced Green beans.
Half cup of peas.
1 cup of sliced Green pepper.
Cow Liver {300g}.
2kg of Chicken.
200ml Vegetable oil.
1 cup sweet corn.
1 cup of sliced Onions.
Curry powder (coloring spice) {2 Tablespoons}.
1 teaspoon ground pepper
Salt to taste.

Serving: 8

Preparation time: 120 mins

Step 1
Wash and precook the chicken and liver together using a teaspoon of salt, half cup of sliced onions, a teaspoon of thyme spice, a teaspoon of curry, two seasoning cubes teaspoon each of powdered ginger and garlic).

Allow the meat to cook for 15 minutes then pick to grill or deep fry. Remember to set the chicken stock (meat water) aside. I serve fried rice with either fried or grilled meat.

Step 2
Chop the cabbage, green beans, carrot, liver, green peppers and set aside.

Step 3
Parboil the 4 cups of rice also and cook with half of the meat stock (water from the meat) and two cups of water, more water if your rice is hard to cook. You want it almost done., about 70% done but not completely soft.

How to Make Fried Rice

Step 4
Set your cooking pot on heat and add 200ml of vegetable oil. You will fry some ingredients for fried rice.

Step 5
Allow heating then add the sliced onions stir for 1-2 minutes.

Step 6
Then add the chopped carrot and green beans, any of these two can actually go first.

Step 7
Add the chopped liver and sweet corn, stir. And you should have your pot looking like this.

Step 8
Add chicken stock (meat water), ground pepper (optional), a teaspoon of salt and a seasoning cube then stir and taste, you may add more salt.
Add the green peas.

Stir for 1-2 minutes then add cabbage and the curry powder for yellowish fried rice.

Taste for salt, it should taste spicy and look yellowish.

If it tastes nice and colorful, then add the green pepper. Stir.

Mixing the Fried Rice

Since the vegetables are well fried and spiced, you add the precooked rice and stir very well.

Combine with fried or grilled chicken and serve.

  • Pressure cooker

Ingredients
  

  • 4 cups of rice.
  • 4 cups of sliced Cabbage.
  • 2 cups of sliced Carrot.
  • 2 cups of sliced Green beans.
  • Half cup of peas.
  • 1 cup of sliced Green pepper.
  • Cow Liver {300g}.
  • 2 kg of Chicken.
  • 200 ml Vegetable oil.
  • 1 cup sweet corn.
  • 1 cup of sliced Onions.
  • Curry powder coloring spice {2 Tablespoons}.
  • 1 teaspoon ground pepper
  • Salt to taste.

Instructions
 

  • To make fried rice we start by precooking the meats, chicken and liver and chop the liver to small cubes.
    Cow Liver {300g}., 2 kg of Chicken.
  • Also chop the vegetables - carrots, green beans, cabbage, green peppers and set aside as you can see in the photo above.
    2 cups of sliced Green beans., 2 cups of sliced Carrot.
  • Precook and wash the rice, then cook the rice with water for the 15-15 minutes, you want it almost done but not fully cooked.
    4 cups of rice.
  • Set a cooking pot on heat, fry the vegetables starting with onions, carrot, green beans, fry for 3 minutes then add the liver.
  • Add the sweet corn and let it fry for another minute. Add the chicken stock, a teaspoon of salt, one seasoning cube and powder pepper to taste.
    1 cup sweet corn., 1 teaspoon ground pepper
  • Stir and taste.
  • Add green peas and follow with cabbage, stir all together before adding the curry powder. 2 table spoons should be enough.
    4 cups of sliced Cabbage., Curry powder
  • Stir all together and taste for salt.
  • Add the green peppers, stir then add the precooked rice too. Stir all together and allow the rice to simmer on low heat for 10 minutes.
    1 cup of sliced Green pepper.
  • You have your mouth-watery fried rice ready to serve.
  • In Nigeria, we serve fried rice and chicken.
